Makes 4-5 skewers
Ingredients
Extra Large Shrimp, peeled and deveined, 16-20 count
2 heads baby bok choy
1 red bell pepper
1 yellow bell pepper
2 cloves of garlic, minced
1 Tbsp freshly grated ginger
1 C teriyaki sauce
¼ C soy sauce
3 plums, peeled and cut into small dice
1 tsp red pepper flakes
2 tsp sesame oil
3 Tbsp honey
Directions
- In a small sauce pot on medium high heat add the garlic, ginger, teriyaki sauce, soy sauce, plums, red pepper flakes, sesame oil, and honey. Whisk all ingredients well.
- Once the brown sugar dissolves reduce the heat to low and let cook for 10 minutes or until mixture thickens. Let cool.
- Cut the bell peppers into medium equal size pieces, wash, and set aside.
- Tare apart the bok choy in whole pieces, wash, and set aside.
- Season the shrimp with salt and pepper and set aside.
- Pour the plum mixture into a blender and blend until smooth.
- Skewers on a few pieces of the bell peppers, bok choy, and skewer on about 4 shrimp on each wooden skewer.
- Brush on some of the plum glaze on both sides of the skewers. Grill on medium high heat until the shrimp are done (about 4-5 minutes)
- Once off the grill give the skewers one more coating of the plum glaze.
Chef Lovely Tip
Try this same recipe with chicken, beef, pork, or even salmon! This glaze can also be made with Asian pears or apricots in place of plums.
