What ever fruit you decide to use, poach it in water, lemon juice, brown sugar, and 2 cinnamon sticks. (if you use a more delicate fruit like pineapple of mango, skip this step.) Let the fruit cool in your poaching liquid
I took one puff pastry sheet and place it on a buttered cookie sheet. Then, take a fork and make holes over the entire pastry. Next, evenly spread on some apricot jelly.
Layer your fruit in a beautiful pattern over the whole pastry. In a bowl, mix some light brown sugar, melted butter, and sliced almonds. (You can use any nut you like. I love to use hazelnuts)
Bake until golden and bubbly, about 35-40 min.
